Spinach and beef stew

    Ingredients

    • 500g minced meat

    • 700g frozen spinach (about 2 bags)

    • 1 bunch fresh coriander, chopped
    • 10 garlic cloves, crushed
    • ¼ cup pine nuts (optional)
    • 1 lemon, juiced
    • ¼ cup olive oil (divided)
    • 2 teaspoons seven spices mix (or a mix of allspice, cinnamon, nutmeg)
    • ½ teaspoon black pepper
    • 3 cups water  

     

    Directions

    Step 1: Cook the minced meat

    1. Heat a large pot on medium heat.
    2. Add the minced meat and cook, stirring, until brown (about 5-7 minutes).
    3. Put in 3 tablespoons of olive oil, seven spices, black pepper. Cook for 5 more minutes.

    Step 2: Prepare the garlic and coriander

    1. Crush the garlic using a garlic press or by mashing it with a spoon.
    2. Wash the coriander, chop it finely, and set it aside.

    Step 3: Make the stew  

    1. Add the crushed garlic to the pot with the minced meat and mix for 1 minute.
    2. Add the chopped coriander and cook for another 2-3 minutes.
    3. Stir in the frozen spinach and cook on medium heat until softened (about 5 minutes).
    4. Add 3 cups of water, bring it to a boil, then lower the heat to medium-low.
    5. Cover the pot and let it simmer for 25 minutes until the stew thickens slightly.

    Step 4: Toast the Pine Nuts (Optional)

    1. In a small pan, heat 1 tablespoon of olive oil on low heat.
    2. Add the pine nuts and stir until golden brown (about 2 minutes). Remove and set aside. You can sprinkle the toasted pine nuts on top of the stew or serve them on the side. 

    If your child is younger than 2 years, mash the pine nuts. Whole pine nuts can make your baby choke.

    Step 5: Final step

    • Stir the lemon juice into the stew.
    • Serve warm with rice (try rice with vermicelli).
