Ingredients
500g minced meat
700g frozen spinach (about 2 bags)
- 1 bunch fresh coriander, chopped
- 10 garlic cloves, crushed
- ¼ cup pine nuts (optional)
- 1 lemon, juiced
- ¼ cup olive oil (divided)
- 2 teaspoons seven spices mix (or a mix of allspice, cinnamon, nutmeg)
- ½ teaspoon black pepper
- 3 cups water
Directions
Step 1: Cook the minced meat
- Heat a large pot on medium heat.
- Add the minced meat and cook, stirring, until brown (about 5-7 minutes).
- Put in 3 tablespoons of olive oil, seven spices, black pepper. Cook for 5 more minutes.
Step 2: Prepare the garlic and coriander
- Crush the garlic using a garlic press or by mashing it with a spoon.
- Wash the coriander, chop it finely, and set it aside.
Step 3: Make the stew
- Add the crushed garlic to the pot with the minced meat and mix for 1 minute.
- Add the chopped coriander and cook for another 2-3 minutes.
- Stir in the frozen spinach and cook on medium heat until softened (about 5 minutes).
- Add 3 cups of water, bring it to a boil, then lower the heat to medium-low.
- Cover the pot and let it simmer for 25 minutes until the stew thickens slightly.
Step 4: Toast the Pine Nuts (Optional)
- In a small pan, heat 1 tablespoon of olive oil on low heat.
- Add the pine nuts and stir until golden brown (about 2 minutes). Remove and set aside. You can sprinkle the toasted pine nuts on top of the stew or serve them on the side.
If your child is younger than 2 years, mash the pine nuts. Whole pine nuts can make your baby choke.
Step 5: Final step
- Stir the lemon juice into the stew.
- Serve warm with rice (try rice with vermicelli).
