Ingredients
- 1 can (400g) cannellini, drained and rinsed (no added salt)
- 1 small to medium sweet potato, cut into 2cm pieces
- 1/2 to 1 tsp ground coriander
- 1/4 to 1/2 tsp ground cumin
- 1 to 2 tbsp plain flour*
- Olive oil, for cooking
Directions
- Cook chopped sweet potato in microwave for 5 minutes, or until soft.
- Add all ingredients to a bowl except the oil.
- Mash ingredients with a fork or blitz in a food processor until mixed well and form a thick paste.
- Using a tablespoon, scope the mixture into your hands and roll into balls.
- Heat a pan with oil over medium-low heat. Add the balls and gently press on them with the back of the spoon to flatten.
- Fry for 4 minutes on each side.
