Ingredients
1 cup green lentils
½ cup white rice
2 onions
2 tablespoons olive oil
4 cups water
1½ teaspoons ground cumin
½ teaspoon black pepper
Directions
Step 1: Cook the Lentils (10 minutes)
- Put the lentils and 4 cups of water into a pot.
- Bring it to a boil, then turn the heat to medium and let it cook for 10 minutes.
- Chop one onion into small pieces.
- Heat 1 tablespoon of olive oil in a small pan over medium heat.
- Add the chopped onion and cook until it becomes soft and clear (about 5 minutes).
- Stir in the cumin and cook for 1 more minute. Set it aside.
- Slice the second onion into thin strips. Use the same pan, add 1 tablespoon of olive oil, and cook on low heat until the onion turns golden brown caramelised (about 10 minutes). Stir often so it doesn’t burn.
Step 2: Add the Rice and Spices
- Rinse the rice under cold water until the water runs clear.
- Add the rice and the cooked chopped onion to the pot with the lentils.
- Add black pepper and cumin
- Turn the heat to low, cover the pot, and let it cook for 10-15 minutes until the water is gone.
Step 3: Garnish and Serve
- Put the lentils and rice onto a place and add golden onion slices on top (optional).
- Serve warm or at room temperature with salad or natural yogurt on the side.
- Mash or blend the lentils and rice for children younger than 12 months.
