Lentils with rice (Mujadara)

    Ingredients

    • 1 cup green lentils

    • ½ cup white rice

    • 2 onions

    • 2 tablespoons olive oil

    • 4 cups water

    • 1½ teaspoons ground cumin

    • ½ teaspoon black pepper 

     

    Directions

    Step 1: Cook the Lentils (10 minutes) 

    1. Put the lentils and 4 cups of water into a pot.
    2. Bring it to a boil, then turn the heat to medium and let it cook for 10 minutes.
    3. Chop one onion into small pieces.
    4. Heat 1 tablespoon of olive oil in a small pan over medium heat.
    5. Add the chopped onion and cook until it becomes soft and clear (about 5 minutes).
    6. Stir in the cumin and cook for 1 more minute. Set it aside.
    7. Slice the second onion into thin strips. Use the same pan, add 1 tablespoon of olive oil, and cook on low heat until the onion turns golden brown caramelised (about 10 minutes). Stir often so it doesn’t burn. 

    Step 2: Add the Rice and Spices  

    1. Rinse the rice under cold water until the water runs clear.
    2. Add the rice and the cooked chopped onion to the pot with the lentils.
    3. Add black pepper and cumin
    4. Turn the heat to low, cover the pot, and let it cook for 10-15 minutes until the water is gone.

    Step 3: Garnish and Serve  

    • Put the lentils and rice onto a place and add golden onion slices on top (optional).
    • Serve warm or at room temperature with salad or natural yogurt on the side.
    • Mash or blend the lentils and rice for children younger than 12 months.
