Ingredients
- 1 cup red lentils, rinsed and drained
- 400g tin diced tomatoes or 3-4 fresh tomatoes, chopped
- 1 brown onion, finely diced
- 3 cloves garlic, crushed
- 2 tsp minced ginger
- 3 - 4 cups reduced salt vegetable stock
- 1-2 tsp ground cumin
- 1/4 tsp garama masala
- 1-2 tsp ground coriander
- 1-2 tsp ground turmeric
- 1 tbs olive oil
Directions
- Heat oil in a large saucepan, add onions and cook for 5 min.
- Add spices, garlic, and ginger stir and cook for 1 min until fragrant.
- Add tomatoes, and lentils. Stir and cook for 2 -3 minutes.
- Add stock, stir and gently bring to simmer.
- Cover and simmer on low-to-medium for 30 minutes, stirring occasionally.
- Remove lid and cook for a further 10 minutes or until lentils are nice and soft (or to your preferred texture).
- Serve with your choice of steamed rice or roti.
