Lentil Dhal

    Ingredients

    • 1 cup red lentils, rinsed and drained
    • 400g tin diced tomatoes or 3-4 fresh tomatoes, chopped
    • 1 brown onion, finely diced
    • 3 cloves garlic, crushed
    • 2 tsp minced ginger
    • 3 - 4 cups reduced salt vegetable stock
    • 1-2 tsp ground cumin
    • 1/4 tsp garama masala
    • 1-2 tsp ground coriander
    • 1-2 tsp ground turmeric
    • 1 tbs olive oil

    Directions

    • Heat oil in a large saucepan, add onions and cook for 5 min.
    • Add spices, garlic, and ginger stir and cook for 1 min until fragrant.
    • Add tomatoes, and lentils. Stir and cook for 2 -3 minutes.
    • Add stock, stir and gently bring to simmer.
    • Cover and simmer on low-to-medium for 30 minutes, stirring occasionally.
    • Remove lid and cook for a further 10 minutes or until lentils are nice and soft (or to your preferred texture).
    • Serve with your choice of steamed rice or roti.
